Aging in carboy
How long will yeast survive in a carboy after ferment is over without any food to eat? 1 month ,2 months

I've secondaried @ 70°F for 8-10 months without problems.
I've never primaried longer than 2 months.

I dont have a ref for beer right now, but if I transfer beer to a carboy do I need to wory about making sure its topped up.

The beer will degas a bit during transfer from primary leaving a blanket of CO2. But if you are transferring a 5-gallon batch to a 6-1/2 gallon carboy, it might be best to put a little CO2 in the carboy first.

Cool. I hadn't considered that, but will try it with next batch.
