banana wine
new to the site today. i have 3 batches of wine going now. 1 of them is banana. this is the first time i have tried banana. it has been going about 2 months. i racked it a couple of weeks ago and had a little taste. it was not very good. don' t know what it taste like but it sure wasn't banana. i have been told it takes at least a year and don't give op on it that it will come around. has anyone made banana before if so i would like to hear from u. glad to have found this site.

Not to worry
Howdy,
My advice would be to not worry one bit. I've never made banana wine but I've made a few batches of wine and even some beer that was only fit for the drain after two months but mellowed out nicely after 6 months and even better after a year. Time really changes the taste a lot. I used to think that was only something that folks with really developed taste buds could discern but it's obvious.
Give it at least 6 monts or else send it to me and I'll have it

One of my biggest successes in winemaking was a banana mead I made a few years ago. I only made about a gallon of it, but it used about 6 ripe bananas and about 10lbs of light sweet honey. After bottling, I let it sit for 6 months, and it was wonderful to drink chilled in the summertime. Even my friends who didn't like wine enjoyed this creation. It was sad I made so little, so I have since been urged to make that one again.

I wonder if the sweetness in the mead and honey flavor helped bring out the banana flavor. Also, I am not sure what the acid level would be in a 100% banana wine. I love to eat bananas but the flavor doesn't really seem to stand out.
In the other post about black berry and body you got me interested. I think I will try a banana fruit mixture and see what happens.
