Barleywine

Postby bf1001 » Mon Jan 26, 2009 1:40 am

I've been wanting to do a Barleywine since I found out about them. But a couple of things have held me back. One, I didn't think I had big enough equipment to do one. But then I realized that I could amp up the gravity by adding DME. But more recently I read about Barleywine bottle bombs. I would hate to have 2 cases of it in my cellar for a year only to find out that they all blew up.

So, who here has successfully bottled a Barleywine? Care to share the recipe and procedure? It would be nice to enjoy one of those a year from now while I'm trying to stay warm through these cold Michigan winters. :P

Like anything that ferments, there may be occasion when a bottle may break but I am skeptical of horror stories of the brewing type. Watch the final gravity of your wort before bottling and you should have no troubles. If you are worried, use Belgian style bottles, corks and baskets at bottling time.
