cold break

I use a emersion chiller and now have started running it back to back with one in ice bath feeding one in wort. After reading some recipes I am wondering after reaching a temp below 80 degree should I rack the wort to a bucket. I have just been pouring it in allowing what settles in pan to fall in fermenter also. Seems after reading the recipes they are trying to leave this sediment behind.

I always try to leave as much break material behind as possible when I rack to my carboy. I don't really have a scientific reason for this. I just have a hunch that removing this material helps my beer some way. Maybe someone else can chime in with some real facts.

Creating a nice whirlpool against the coils will aid in chilling faster and coning your break material before racking in to your primary. By leaving the break behind, your beer will be clearer, and will have less trub in primary. Having less trub in primary will allow more beer to be racked to secondary or kegged.
