Dry vs. Liquid Malt
I am wondering if there is a substantial difference between using dry vs. liquid malt extract. Specifically I want to see if I can replace Liquid Gold and Amber Malt Extract with the dry versions to save money.
Thanks

Re: Dry vs. Liquid Malt
Dry extract it fine. I use it quite often.
You can't do a one to one replacement though since the yield from dry malt extract (DME) is about 1.045 units per pound per gallon whereas liquid malt extract (LME) is 1.037-1.039 units per pound per gallon.
Assuming a mean value for LME of 1.038 unts per pound per gallon, when substituting DME for LME one should use 15.6% less DME than LME (i.e. 1 lb. of LME would be equivalent to 0.84 lb. or 13.5 oz. of DME). Alternatively, when substituting LME for DME one should use 18.4% more LME than DME (i.e. 1 lb. of DME would be equivalent to 19.0 oz. or 1 lb. 3.0 oz. of LME).
Note that the yield is indicated on the packaging. I've seen DME at 1.040 units per pound per gallon on occasion. When other values are given one should, of course, adjust the conversions given above.
I hope this helps.

Re: Dry vs. Liquid Malt
Although I rarely do an extract brew I always keep Dried Malt Extract on hand. I use it to make yeast starters, if I miss my target OG in a mash, etc. I prefer it actually to the liquid. I have noticed no flavor advantages with the liquid over the dried extract. Easier to store if handled and stored properly. Won't mold if you don't use all you have.

Seems like most recipes recommend boiling DME while most say not to boil the syrups. Is that generally true?

Liquid extract should be boiled for at least 15 minutes just to make sure its all sterilized.

Re: Dry vs. Liquid Malt
I have been doing nothing but extract brewing and I have just started to play with both to try them out. I am really thinking that I like the liquid better. I am getting better flavor without as much of the twang. Also, and this might have nothing to do with the extract, I get a much better carbonation when I do a liquid batch.
Prost
