Favorite IPA

Postby Kirby » Mon Feb 22, 2010 4:10 pm

Anyone have a favorite recipe for a hoppy IPA?
My favorite local u-brewery "Coast Brewing" makes a Hop-Art IPA which is killer, but for good reason won't share the recipe.
I've tried a couple different ones, but they were a little lackluster.
Cheers.

How agressive do you want it? I made an IPA 3 years ago that satisfied the hop-heads in my life. The IBU's were very high, but it was delicious after about a month in the bottle to mellow. VERY simple:

8lbs Amber LME
3oz Simcoe (60m)
3oz Simcoe (15m)
3oz Simcoe (Dry hop in secondary, three weeks)

I think I used Danstar Nottingham for the yeast.

Some of my personal favorite IPA's have been ones I made with all the "leftover" hops. I generally do a watcha-got IPA once a year.

Thanks for the input. My Hops tastes are what might be termed as aggressive. Besides the local u-brewery's HopArt IPA, I also like Sierra Nevada's Torpedo Extra IPA.
I liked your idea of "whatcha got" brewing. As there are more than 15 different hops in various recipes, your method sounds the best.
Thanks again, cheers. Kirby

I'm becoming very suspicious of recipes that have more than three varieties of hops. I've been wondering about the purpose of it, as one would think the distinctive characteristics of the individual varieties would be lost and you would just get a generic indistinct hop flavour. But perhaps I'm making assumptions.

Some of my brews made entirely, or mainly, of leftovers have been very well recieved. Most bizarely I did a mexican cervaza to which I added all this left over brewing honey in, as well as left over New Zealand hops that stank of passionfruit (because I was afraid to put them in anything important). I didn't know what to make of the beer myself, but everyone else drank it :?

My favorite is Stone IPA. That's brewed in California, in San Marcos. It's got a very clean finish, no vegetal notes to speak of. Another good one is Anderson Valley Hop Ottin' IPA (also from California).
The absolute best, however, is Alpine's Pure Hoppiness. Tons of floral hops - simply an amazing beer. Unfortunately, it's only available in Alpine (east of San Diego), or in a couple of San Diego's better pubs.
