Gluten Free Beer

I'm looking for a beer recipe that is gluten free. I'm thinking that corn and rice are really the only grains that don't have gluten in them so that would leave out our usual wheat, barley, and rye. Any suggestions from you beer makers out there?

Why would you want to make gluten free beer when there are so many other wonderful types of beer out there? Allergies?

Yeah, I think I might have allergies to the gluten in beer. The day after I have some serious issues in my digestive track if you know what I mean. :cry:

You could try priming with something like honey that doesn't have any gluten in it or try brewing with sorghum or buckwheat, both of which are gluten free. Also, you could check out this article on gluten free beer from BYO.

Take it easy man, and keep us posted if you try it out and things work out well for you.

You could try Sorghum extract. It brews very much like Barley as a 1 for 1 substitute and is readily available online. There are some commercial Sorghum brews available for you to try if you want to get an idea of what you are starting with. You should be able to do much better than what you can buy but it gives you an idea of a starting point. The most available seems to Redbridge (http://www.redbridgebeer.com for retailers in your area). You can also brew with millet as well as the corn and rice all of these are gluten free. If you are so inclined you can malt your own Sorghum and Millet but thats a lot of work for starting out.
