green pepper wine
Why can't I find any wine made with bell peppers? They are sweet, and it would seem like a good idea.

I know some people make a jalapeno wine. They use it for cooking. Never heard of a green pepper wine.
Some of the biggest problems you will encounter with vegetable wine is starch haze and also low acid in some vegetables. Low acid can cause spoilage if not corrected quickly at the beginning. Although watermelon is not a vegetable low acid is one of the big problems.
