HOLIDAY ALE
IT'S NOV 20, IS IT TOO LATE TO START A HOLIDAY ALE?
I'M FAIRLY NEW TO BREWING AND I'M NOT SURE IF A HOLIDAY ALE WOULD NEED
MORE CONDITIONING TIME THAN I HAVE LEFT BEFORE CHRISTMAS.
ANY EXPERIENCE IN HOLIDAY ALE BREWING WOULD HELP. THANX

Brew tommorow and you will be good for christmas. 2 weeks in the fermenter and 2 weeks to condition. It might not be real clear but that just enough time to be good. I once did a pale and let it ferment for 1 week. I kegged and force carbonated and served the next day. The beer was great but not clear. We served it up at a local brewfest. The people loved it.

I'd say it depends on how big you intend the beer to be. A lot of people use a big, warming, high alcohol beer as the base for their holiday ales. I doubt that your beer will have enough time to ferment and condition properly if you go that route. You could always brew a big beer like that for next X-mas, though.
If you plan on just doing a normal gravity spiced beer, I think you'll be just fine for the holidays.

Thanks for the advice. I think I will try a mellow version and
if it's not ready by christmas, it will be a new years brew.
