I dont have a recipe for rolling rock, but I can probably help get you started on your very own Rock Recipe!
My wife describes Rolling Rock as "Carbonated Water with a touch of hops". That sounds like a good assessment, and a place to start.
I know that Rolling Rock uses rice to lighten the body of their beer. You can go with rice if you like, or you could use clear candi sugar. This would lighten the body, without the PITA of using rice.
So, for grain for a 5 gallon batch, you could start with:
7 lbs. Pale Malt
2 lbs. Clear Candi Sugar
This amounts to a VERY pale brew (3.2 SRM), at around 5% ABV.
For hops, you could use 1/2 oz. Crystal Hops for 60 minutes. This would amount to a very slight bitterness in the beer (6.2 IBU). While Crystal is usually a finishing hop, its description as "Clean, Mild and Pleasant" couldnt fit any beer better than this one.
You could use a lager yeast if you wanted. However, if I were brewing this beer, I'd probably use a very clean ale yeast, like Danstar Nottingham.
Any other opinions are welcome, as this is only a starting point.
