wanting All Grain Hefeweizen recipe
This weekend I will be doing my first all grain brew day. I have been looking at Hefeweizen recipes and wondering if anyone has a suggestion. I want a nice yellow/straw color with a good citrus, banana, clove flavor. We usually have Pyramid or Widmer Hefeweizen Something nice and lite for spring time mowing

Recipe for 5 gallons:
5 lbs. 2-row Lager or Pilsner Malt
5 lbs. Wheat Malt
1 oz. Crystal hops (alpha acid = ~3%)
Started made with WYeast 3068 (Weihenstephan Weizen) or large Activator size smack pack.
I also recommend at least 3 lbs. of rice hulls to aid in sparging.

Wyeast 3068 is my favorite weizen yeast. It imparts a really nice Bavarian weizen character to your beer.
I recommend decoction mashing when making weizens. This method imparts a wonderful maltiness to the beer that I have been unable to duplicate any other way.
Greg Noonan's New Brewing Lager Beer has a very good description of decoction mashing. I strongly recommend this book as a general brewing book and not just for lagers or decoction mashing.
